Mặc dù có chút cầu kì trong cách chế biến nhưng thực ra lại không tốn quá nhiều thời gian để có thể hoàn thành món mì xào hải sản thơm ngon này. Bí quyết cho món mì xào hải sản thơm ngon chính là sử dụng nước luộc tôm mực để xào mì, nên vị ngọt thấm vào trong từng sợi mì, ngon hơn hẳn cách xào mì bình thường đấy!
Tôm rửa sạch, bóc vỏ, bỏ đầu và lấy sạch chỉ tôm. Phần vỏ vào đầu cho vào nồi xào khoảng 1 phút, khi đã dậy mùi thơm thì cho 500ml nước vào. Nước sôi thì hạ nhỏ lửa, đun thêm 15 phút nữa.
Tiếp đến vớt vỏ và đầu ra rồi cho mực vào nồi, đun khoảng 1 phút thì gắp mực ra, chờ nguội rồi cắt lát vừa ăn. Cuối cùng thêm tôm vào, khi tôm chín thì vớt ra và tắt lửa.
Bắc nước sôi luộc mì. Một mẹo nhỏ cho bạn đó là thêm chút dầu ăn vào nước luộc mì thì sợi mì sẽ tơi, không bị dính vào nhau.
Bắc chảo lên bếp cùng chút dầu ăn, khi dầu nóng đều thì cho tỏi băm vào phi thơm. Cho trứng đã đánh tan vào chiên, dùng muôi đánh trứng ra thành từng miếng nhỏ.
Tiếp đến bạn cho mì và 1/3 số nước nấu tôm mực vào đảo đều. Nấu trong khoảng 1 phút cho cạn hết nước thì bạn thêm gia vị và tôm, mực, giá đỗ, hành lá và phần nước nấu tôm còn lại vào. Tiếp tục xào mì cho đến khi cạn bớt nước thì tắt lửa, ăn nóng, vắt thêm chút chanh và ớt.
